On 9 August, Singapore celebrates its National Day—a time for fireworks, parades, and reflecting on the incredible journey of a small island nation that grew into a global city. While the celebrations fill the skies with red and white, I like to bring that spirit to the kitchen.
This year, I’ve created a dish to match the colours of the flag: Red & White Laksa. A festive twist on one of Singapore’s most iconic dishes, it combines the comforting richness of laksa with symbolic presentation—red broth and white toppings—to honour the nation’s pride.
Why Laksa?
Laksa is one of Singapore’s most recognisable foods. Its roots trace back to the Peranakan community, but over time it has become a dish loved by every culture here. It’s spicy, fragrant, and deeply comforting—the perfect way to celebrate a national holiday built on unity in diversity.
By giving it a red and white makeover, we not only celebrate a dish but also the values of harmony and pride that define Singapore.
🍜 Recipe: Red & White Laksa

Cook Time: 30 minutes
Ingredients
Laksa Broth (Red):

2 tbsp laksa paste

400 ml coconut milk
-
500 ml chicken stock
-
6 prawns, shelled (reserve shells for stock)

1 tbsp sambal chili (for colour & spice)

2 kaffir lime leaves
Noodles & Toppings (White):

300 g thick rice vermicelli (laksa noodles)

2 chicken breasts, poached and shredded

2 hard-boiled eggs, halved
-
100 g bean sprouts
-
4 slices of fishcake
Garnish:

Fresh coriander
-
Sliced red chilli
-
Lime wedges
Instructions

Prepare the Broth

Heat a pot, add laksa paste and stir until fragrant.

Add coconut milk and chicken stock, simmer gently.

Stir in sambal chilli and kaffir lime leaves.

Add prawn shells briefly for flavour, then remove.

Cook the Noodles & Toppings

Boil laksa noodles until tender, drain.

Poach chicken breasts, shred finely.

Slice fishcake, prepare sprouts, and boil eggs.

Assemble the Bowls

Place noodles in serving bowls.

Pour hot broth over the noodles.

Top with chicken, prawns, fishcake, bean sprouts, and half an egg.
